Snacks like nuts and cheese were a given, but when the idea to pack a few mason jars and some packets of Southern Breeze Sweet Tea struck me, I have to be honest, I was pretty proud of myself. It's never occurred to me before to pack my own beverages. I always just stick to water when we travel. Of course it helps with hydration, but it also is readily available at every stop. However, I also know myself well-enough to know that I would definitely feel a little less strict about my sugar, carb, and calorie intake on vacation, and may or may not be tempted by a soda or two. After all, vacation is an excuse to let loose a little in every sense of the word. </div>

Before hitting the road, I rounded up a few mason jars. I kept them empty on the trip, but had a little plan in mind. Each time we hit a fast food chain for breakfast or lunch, I'd ask for a cup of ice and a bottle of water (a cup of water would work too!). Then, I'd add my Southern Breeze Sweet Tea cold brew tea bag to the mason jar, fill it with ice and pour water to the top. The tea would steep as we were getting back on the interstate, and once I got all of the food squared away with my chauffeur (aka husband, the driver), I would return to my tea, stick a straw in, give it a stir, and enjoy!<br />

I've shared with you before my love for Southern Breeze Sweet Tea. And that is in large part due to their Half and Half cold brew flavor. One, it's single serving which means if you're in the mood for tea, you can make just one glass! Two, it's zero calories and zero carbs making it a healthy alternative. (Note: if you're doing Keto like me, be sure to make decisions for yourself about which sweeteners you want to incorporate into your diet. Since I drink 95% water, I don't mind treating myself to different sweeteners from time to time. Southern Breeze is made with just 4 ingredients: Black Tea, Natural Flavor, Citric Acid, and Sucralose (sweetener).) Three, it's cold brew, so no boiling water required which is perfect for road-tripping! </div>

In addition to this little travel hack, I also packed a few things to keep myself occupied. I always make sure to have a good read, and even after having this Emily Giffin book for a few years, I still had not read it, so it came along for the ride. I also grabbed a few old issues of Southern Living that I wanted to read. I packed my good headphones that go over my ears for catching up on the latest podcasts, too. I don't know about you guys, but the tiny earbuds aren't comfortable for me, so these are a must when I know I'll have them in/on for a while.<br />

We started our weekend with a stop along the way for me for work, so I couldn't arrive in my usual Lululemon attire. I also look at it like this: if the choice is a cookie or a banana, having a banana is the better choice. I debated long and hard about whether I was going to share my experience with Keto on the blog, but the reality is, it's been very much a part of my life for the past month, and that's what this blog is all about - my life!<br />
<br />
<i>Before I get started, let me reiterate: this is NOT for everyone, and I am absolutely NOT advising anyone to go down this path. I am NOT a doctor (obviously), and I am not an expert (even more obviously), I just wanted to share and document what has worked for me! </i><br />
<br />
As I've mentioned before, I got really motivated to lose weight immediately after Christmas (like most of the world). I started down a health(ier) path of <b><a href="http://www.probablypolkadots.com/2018/01/current-favorite-healthy-recipes.html" target="_blank">recipes</a></b>, incorporating better foods, and eliminating foods that I know send me spiraling. I also started taking a few barre classes each week to get back on a workout schedule.<br />
<br />
Three months later, I had not seen any changes on the scale or in how my clothes fit. There's also a better than average chance that while I thought I was eating better, I really wasn't. I needed a fix, and I needed it fast. I kept hearing about people giving the Keto diet a try, and my ears perked-up. These people were talking drastic changes to their bodies and quickly, too. I decided pretty quickly I had nothing to lose other than weight, so why not?<br />
<br />
I started by giving a few recipes a try because I know two things about myself:<br />
<br />
1. If it doesn't taste good, I'm not going to eat it.<br />
2. If it takes longer than half an hour, I'm not going to make it.<br />
<br />
These are my rules for my meals. I want to start dinner at 7, and be watching Jeopardy at 7:30, so I have to find meals that fit within that window. The recipes I tried did.<br />
<br />
Next, I ordered the <b><a href="http://bit.ly/2IoAy1L" target="_blank">Simply Keto</a></b> cookbook, read it from cover to cover in a few hours, figured out my macros, bookmarked the recipes I wanted to try, got my husband on board, and planned to start the following Monday, March 5. I haven't looked back since.<br />
<br />
Without getting into a ton of details, the Keto diet is a diet consisting of high fat, moderate protein, and low carbs. Like as low as possible. And yes, fruits and vegetables have carbs. A lot of carbs. My personal goal was to stay at 18 carbs, but more often than not, I hovered around 20-22 per day. I quickly discovered that was the amount that worked for me while satiating my appetite and my cravings.<br />
<br />
<b>A typical day looked like this:</b><br />
<br />
<b>Pre-Breakfast:</b> Coffee (with half and half, sweetener, MCT oil, and vanilla) or English Breakfast tea with heavy cream<br />
<br />
<b>Breakfast:</b> Egg Casserole, <b><a href="https://www.wholesomeyum.com/recipes/low-carb-bagels-with-almond-flour-keto-gluten-free-5-ingredients/" target="_blank">Keto Bagel</a></b> w/cream cheese, or Frittata<br />
<br />
<b>Lunch: </b>Chicken Salad (either homemade or from Chicken Salad Chick) with cucumbers and ranch<br />
<br />
<b>Dinner:</b> Some recipe from <b><a href="http://bit.ly/2IoAy1L" target="_blank">Simply Keto</a></b>!<br />
<br />
<b>Dessert:</b> Keto approved chocolate, brownies, cheesecakes, or cupcakes (yep...)<br />
<br />
Notice something? I don't have any snacks because most days, I was completely full sticking to these items alone. The full fat items like cheese, ranch, etc. keep you full!<br />
<br />
Yes, I still drink - mostly clear alcohols like my favorite, gin, and soda with excessive amounts of limes. Also wine. Because wine is the elixir of life.<br />
<br />
Yes, I still go out to eat. It's actually super easy to eat out on Keto! Any diet that let's me go to a dive and still order chicken wings or a burger is my kind of diet. Oh, and give me all the charcuterie, please.<br />
<br />
Yes, I still eat vegetables.<br />
<br />
Yes, I occasionally had higher carb food (like popcorn at a soccer game) because I had extra carbs to use...and I wanted the popcorn.<br />
<br />
Yes, this diet fit into my lifestyle.<br />

<b>What did I miss the most?</b><br />

Mexican. We eat a lot of Mexican food in our house. I'm talking multiple times a week. This is probably why I was spiraling out of control. I miss tortilla chips and queso. A lot.<br />

Fries. I can definitely order a burger without a bun, but man oh man do I miss the fries that come with it.<br />
<br />
<b>So what were my results? </b><br />

Here are two pictures of Hunter and I for a side-by-side comparison. We've been doing the diet together which has been a HUGE motivator for both of us. The first photo was taken at a black tie wedding on February 24th. The second photo was taken yesterday at Easter (5 weeks in between photos, but just 4 weeks of dieting).<br />

As of Tuesday, April 3, four weeks of being on the Keto diet, I have lost <b>over 7 pounds</b>. My clothes fit noticeably different, and I am noticeably thinner than I was. As a result, I'm going to keep going. I have a few milestones I want to hit (like losing those stubborn 3ish extra pounds), and a few vacations planned. My goal is not to "be keto" forever, but to get to a better place with my weight and slowly start to incorporate healthy carbs and starches (like brown rice and sweet potatoes) while allowing myself to have a hamburger WITH a bun every now and then.<br />

True story: the very first thing I chose when we started our renovation was our master bathroom marble. It was quite the ordeal to get it completed, and I would never recommend the company we purchased it from, but it was worth the headache. It's called Alabama White and is from a quarry Sylacauga, Alabama. It is almost entirely white with little to no grey veining, and I love it.<br />

There are a few other things I love about our master bath starting with the navy cabinets. The color is Hale Navy by Benjamin Moore, and we paired them with brass pulls from <a href="https://www.restorationhardware.com/catalog/product/product.jsp?productId=prod10310357&categoryId=cat1512023" target="_blank">Restoration Hardware</a>. I am a big fan of mixing metals (and mixing patterns and furniture in general), so we chose polished nickel for the rest of our finishes throughout the room. </div>

I think it's so important to try to mix and match different patterns, colors, and metals. I realize this is not for everyone, and some people love a simple, monochromatic feel, but I think mixing these metals together really adds so much warmth and character to our space.<br />

The freestanding tub was one of my must-have wish list items, and <a href="http://bit.ly/2Gokiy6" target="_blank">the light fixture</a> from Serena and Lily really makes a statement in the tub / separate water closet area. A friend and health expert recently told me to expect several metabolism shifts over the next few years. He said the first probably happened around 30. As I've mentioned, my house has been on somewhat of a health kick. Or at least our version of a health kick. We haven't been indulging in things like donuts, cupcakes, and cookies in an effort to embrace a healthier January. The plan is to carry it right on into February, too!</div>

However, as we all know, the hard part of February is all of the fun things that happen during that month. We basically kick it off with "the big game" which is followed by Mardi Gras which is promptly followed by Valentine's Day. In an effort not to totally go off the bandwagon, I've been thinking creatively about chocolate-ridden holidays like Valentine's Day, and today, I've got a fun alternative perfect for little kids and kids at heart: healthy apple doughnuts. </div>

Apples are a staple around here. I keep them for on the go snacking, easy baking, and fun recipes like this one. I love this concept because it's perfect for even the smallest kiddos to get involved. It has been crazy cold in Atlanta for at least the past month, and I'm not even remotely ashamed to admit that a few weeks ago, it was so cold (in the teens all day, every day), that I didn't leave my house for almost a week. It's sounds ridiculous to say out loud, but it was freezing...literally. </div>

During the course of that time, I developed super dry lips. I was drinking water, wearing some sort of balm, and doing all of the "right" things, but my lips got to be so chapped, they physically hurt. I did a little research and discovered that if your lips are chapped, and you never rid them of the dry skin (ew), adding more and more balm isn't necessarily going to do anything. You have to remove the dry skin in order for them to heal. </div>

We tried this Shakshuka last week, and it. is. phenomenal, and I've been dreaming of it ever since. Shakshuka is typically served with a hearty thick bread, but I didn't miss it at all. If you've never made or had a frittata, it's best explained as a quiche without the crust. Healthy muhc? You bet! Upon realizing we purchased a few of the wrong ingredients for this one, we made a few modifications and it turned out fabulous, so I can only imagine how good the OG is. Hunter is our Smoothie Maker, and all of his concoctions are so good. He usually follows a recipe by Simple Green Smoothies, and it's a rare day that it's not completely yummy. At the start of the new year, I do a round-up of my favorite posts of the year. These are sometimes my most popular posts, sometimes my least popular posts, or sometimes just posts that I want to include. It's always fun to look back and see the different tips, tricks, and stories I've told, and I am always reminded of the great things that I've accomplished in a year. </div>

2017 brought one huge change for us: <b><a href="http://www.probablypolkadots.com/search?q=ppd+renovates" target="_blank">we renovated our home</a></b>. It's hard to imagine that at the beginning of 2017, we did not have a roof, but by the end of the year, we not only have a roof, walls, floors, and decor, but we also hosted family here for Christmas. It truly is crazy what happens in a year. </div>

As I move into 2018, I'm reflecting on the past year both personally and for the blog. I am hoping to bring content that is worth-while and not what every other blogger is doing because frankly, I'm sick of reading the same stuff over and over. I'm determined to only share when I feel like I have something to say. I am also determined to share more personal posts that don't gloss over the important things happening in the world around us. </div>

Personally, I'm sure like most of you, I'm hoping to consider self care. I know that's such a buzzy word right now, but it is what it is, and it is something I need to pay attention to. And self care doesn't just mean diet/exercise. I want to read more. I want to say no more. I want to sleep better. I want to get back to my daily scripture reading. I want to see my friends more. I want to travel more. Basically, I want to do what I want to do, not what I feel obligated to do. </div>

One of my goals is to have a little holiday something in every room - even the bathrooms! I have a few holiday tea towels, and I've layered them over fluffier versions in the bathroom for a little festive fun there. This is a Jack-and-Jill bathroom, so there's another tea towel opposite of this one which means you can get a glimpse from each door as you enter. Cute cute. </div>

This is one of our three guest rooms and happens to be the most finished. I added a sweet hand-hooked pillow from <b><a href="http://bit.ly/2Awihz0" target="_blank">World Market</a></b> to the bed along with a series of bottle brush trees from Homegoods that I had left over from a photoshoot from a few years ago. Even that tiny bit of holiday decor transforms the room! </div>

Finally, the festivities continue in our master bedroom. I grew up with a tree with colored lights, so I always wanted to have two trees: one with colored lights and one with white lights. This tree in our bedroom has all of the ornaments I've collected from swaps, students, and travels over the years. I especially love the one of our first married Christmas card. </div>

I just love this time of year, don't y'all? This year is perhaps a little more exciting for me than previous years because it's the first year in our house for the holidays since <b><a href="http://www.probablypolkadots.com/search?q=ppd+renovates" target="_blank">we renovated</a></b>. Not only does that mean we're working with different room layouts and color schemes, but we're also working with some new places to set-up our decor. It has been super fun but not without a few challenges. </div>

In fact, we kicked off the season back in October when we bought our faux tree from Home Depot. During our renovation, we tossed our other trees (yes, I have multiple), so I wanted to be on top of things. I insisted that we grab it before they all sold out. Last week when we went to put it up, we discovered that it was enormous...as in, it took up our entire dining room. I was not only disappointed but concerned because the tree selection goes downhill fast. Thankfully, I was able to find a <b><a href="https://www.lowes.com/pd/GE-7-5-ft-Pre-lit-Aspen-Fir-Slim-Artificial-Christmas-Tree-with-800-Constant-Clear-White-Incandescent-Lights/1000275733" target="_blank">suitable replacement</a></b>, for $100 less that I might like 100x better. Win win! </div>

Of course, I've added a few new items - mostly tree decor like <b><a href="https://www.ballarddesigns.com/wired-canopy-stripe-ribbon/444353" target="_blank">navy striped ribbon</a></b> & <b><a href="http://bit.ly/2Ays1bK" target="_blank">faux magnolias</a></b> (which are a little trick... ;) - but I've also just enjoyed using what we already have in a new way. In today's post, you'll get a peek at our holiday decor, but you'll also get to see a few of the other rooms in the house that I've almost completed. Confession: my living room/dining room is far from done. We're missing an additional rug under the dining table (eventually going for a layered look!). We definitely need some art above the dining room tables. I have about 8 pillows picked out for our sectional that I haven't had the funds to buy yet. But, I love how FULL the room looks right now. </div>

I went with a navy, white, red, silver, and gold theme this year. Mostly because that's what I had. My mom and grandmother started a <b><a href="https://www.department56.com/category/villages/dickens+village.do" target="_blank">Department 56 Dickens Christmas Village</a></b> for me when I was in college, and then my MIL generously gifted me a few more pieces a few years ago. I was an English major in college, and <i>A Christmas Carol</i> is one of my all-time favorite stories. This village is a little homage to my love for reading. I hope to keep expanding it over the years starting with pieces directly related to the story. </div>

The dining room is next. I have big plans for my dining room table, but since I work there every day (long story), I have to keep it functional. The mercury glass trees are from Target many years ago, and I sprinkled in a few votives and some scraps that fell off of our Christmas card garland. </div>

For our Christmas cards this year, I hung garland around the door to our kitchen. As we get a card, I'm punching it with a hole and tying it to the garland with navy blue satin ribbon. I'll keep the ribbon to reuse next year and get new fresh garland. I'm pretty proud of myself. </div>

The bar cart gets festive, too...because where else in your home is more worthy than some Christmas spirit than the bar?! The red Santa wine glasses were a gift from an annual Christmas swap from my friends from teaching. We do it every year, and I'm so glad I snagged these a few years ago! I also have a pretty dish from Vietri from my MIL along with some cute cocktail napkins and a felt tree. </div>

Growing up, my dad had this rule: we didn't travel for Christmas. Everyone, every year, was welcome at our house which often meant we had a tiny house filled to the brim with people - mostly, my immediate family of five and my grandparents, my Nana & PopPop. They would either come a few days before Christmas or Christmas day and bring loads of gifts and a cooler full of annual Christmas treats. </div>

Nana always made a few things: chocolate candy with marshmallows (which I never loved...shhhhh...don't tell anyone), homemade spicy snack mix, and my favorite: garlic cheese. Eventually, Christmas became synonymous with garlic cheese. </div>

My Nana passed away earlier this year, and this will be our first Christmas officially sans garlic cheese. So, I set out to try the recipe for myself. I had worked it up in my head as though it was going to be this crazy involved recipe that I'd never be able to accomplish. Well, it turns out that it's not complicated at all. I'm not sure I've mastered her flavor profiles - you know how grandmother's are "just a pinch of this or that" without any exact measuring. makes 2 logs</div>

<b>You will need:</b></div>

- 1 lb sharp cheddar</div>
<div style="text-align: left;">
- 1 block of cream cheese, softened</div>
<div style="text-align: left;">
- 2 cloves of garlic, minced </div>
<div style="text-align: left;">
- 2 tsp red pepper</div>
<div style="text-align: left;">
- black pepper to taste</div>
<div style="text-align: left;">
- paprika </div>

<b>To prepare:</b></div>

1. Set-out cream cheese to soften. </div>

2. Shred block of sharp cheddar using a food processor and cheese grater attachment. If you don't have a food processor, you can grate by hand. </div>

3. Once cheese is grated, remove cheese and set aside. Swap your attachments in your food processor back to the regular blade. </div>

4. Add half of the cheese back to food processor. Add half of the block of cream cheese and pulse. </div>

5. Repeat step 4, leaving original mixture in processor. </div>

6. Add garlic, red pepper, and pepper. Pulse one final time. </div>

As mentioned from yesterday's post: caramel apples are the best, and after a little baking snafu, I had to improvise to fulfill my craving. My husband and I both have an epic sweet tooth. You'll rarely find us between 8 and 10 PM without some sort of treat in our hands. Enter the baked caramel apple. This recipe is super simple, and is absolutely perfect for a fall evening. Because it's a prep-it-and-forget-it recipe, you can do all of the work up front (all three steps), pop it in the oven and basically leave it there until you're ready to serve. I like using red apples for this recipe, and choose to use Autumn Glory, a unique apple variety from Washington state, because their crispness and flavor is the best out there. When you eat one, you can notice the sweet hints of caramel and cinnamon which are perfect for baked apples because the ingredients will only bring out those notes even more.<br />

<b>A consistent color palette.</b> I am basically rotating between black, navy, and gray, and I'm not sad about it. These colors not only look pulled together, but they're interchangeable with each other too. </div>

<b>Investing in multi-season shoes.</b> I picked up a pair of flats during the Nordstrom sale that I am still wearing almost every day. I also added a pair of peep-toe booties and <b><a href="http://bit.ly/2AdSQma" target="_blank">black booties</a></b> which were amazing in fall and will carry me through a lot of the winter too - hooray for mild winters in the South. </div>

Let's be real: is there anything more delightful in the fall than a caramel apple? In my humble opinion, there simply isn't. However, while caramel apples are super fun to make and quite delicious, too, prep and clean-up can be a sticky mess. Between melting the caramel just right, finding suitable sticks, and buffing the apples so the caramel sticks, you never quite know if the path to fall's favorite treat is going to take a few minutes or several hours. </div>

Case in point: when I set-out to develop caramel apple "cake-pops." I had a brilliant idea of making miniature caramel apples, and I got to work scooping tiny balls out of my <b><a href="https://www.superfreshgrowers.com/our-fruit/apples/autumn-glory" target="_blank">Autumn Glory apples</a></b> with a melon baller. These were going to be EPIC...and as I dipped the tiny little balls into caramel, my recipe dreams crumbled to the ground: the caramel slipped right off into a sticky puddle. Not exactly what I had imagined. And so, I improvised.<br />

The idea behind the cakepops was to create something healthy yet fun. With my caramel apple topping bar already prepared - a little midweek treat to myself - I turned lemons into lemonade. I melted some caramel soft candies, added a little sea salt, sliced up a delicious, sweet cinnamon-flavored apple and enjoyed a caramel apple snack plate. Here's what I included on mine:<br />

The possibilities with this are endless. I love the idea of doing this cheese plate style with tons of toppings for a "healthier"girls night. Think things like shredded coconut, crushed toasted pecans, miniature chocolate chips, sprinkles, and even melted fondue cheese.<br />

<b>To prepare:</b></div>

Mix salad dressing ingredients together and set aside. </div>

Using a food processor, shred Brussels sprouts using the shredding attachment. If you do not have a processor, cut your sprouts into thin slices using a knife or a mandolin. </div>

Add shaved sprouts to a large bowl and add remaining ingredients up until shallot. Gently toss and refrigerate. </div>

Slice shallots into thin rings. Add enough olive oil to a small pan and fry shallots until they are crisp. This goes quickly, so pay attention as not to burn. Allow shallots to dry on a paper towel. </div>

Just before serving, pour dressing over salad and gently toss. Top with fried shallots. </div>

Note: If you aren't into shallots, feel free to use pancetta in it's place. Simply fry like bacon over a pan. I love adding a little salty crunch, and either the shallots or pancetta works well! </div>

It was crowded and hot - a recipe for disaster. After standing on the platform for a few minutes, a man pushed through the crowd and claimed a spot in front of me - a spot where I was left nearly touching the back of him. Perhaps it was because I had left a little breathing room between me and the woman in front of me. My bad. I rolled my eyes, and probably muttered something like “cool” under my breath. </span></span></div>

I was stunned, and the only reply I could squeak out was “me too.” </span></span></div>

I could have even asked him why he did that, but at the end of things, he had the power and the unspoken authority, as a man, to steal that space and not think twice about it. </span></span></div>

In that moment on the train, I was made to feel as though I had done something wrong. This is probably the same feeling that many women have, I would venture to guess, on a daily basis. </span></span></div>

Read some of the news stories about Harvey Weinstein, Bill O'Reilly, and others. Think about why these men, and even those that are less extreme examples, feel as though they can repeatedly behave this way. Then ask yourself why women are made to feel slight, wrong, and even crazy for speaking up. Then think about what we can do, as a society, to make a difference. </span></span></div>

Refrain from using words like outspoken, spirited, and hot-headed to describe little girls when we would never use those words to describe boys. Think of women as your partners, your counterparts, and your comrades. It has to start with you. </span></span><br />

My farmer's market always has the most beautiful vibrant flowers, and when I saw these that looked like brains, I was sold! If you don't have a farmer's market at your fingertips, head to your local grocery store. You can choose several bouquets and deconstruct them to get exactly what you want. I even think roses would be fabulous in the skull. If you tightly arrange them, you can really make a big, brainy impact. </div>

If you've been around me for longer than 5 minutes, you probably know that my favorite time of year is fall, my favorite month is October, and my favorite holiday is Halloween. It started when I was a kid, probably because my birthday is just two days before, and I never really let it go. </div>

My mom did Halloween decor big in our house - she even hung yards and yards of black trash bags in our garage one year to create a spooky spot for my birthday party. One of my favorite Halloween decorations was an enormous blow-up pumpkin. Not the ones we have now - more like a giant beach ball. This thing had to have been a few feet big, or at least it appeared that way to me when I was under 10. The enormous pumpkin signified that Halloween was officially here. </div>

This is the first year that we've really decorated for Halloween, and it's the first year I've allowed myself to buy decor that will be with me for a while versus just for the season. I've been scouring unique spots for home decor since September 1st, and I just wrapped up my purchases this week. My goal was to buy things that would be fun for Halloween, but I could easily shift into Thanksgiving, and I think it worked great! </div>

Outside, I chose to go all in with pumpkins of all shades of orange. Orange pumpkins have gotten a bad reputation over the past few years. Don't get me wrong, I love a white pumpkin too, but the orange ones look great outside and will look even better once the leaves start to change. </div>

We also picked up several cheap spiders from Amazon to hang on the house. I've never done anything like this before, and I think the effect is chic but fun. These three little items might seem like they don't fit with everything else, but they're probably the most meaningful decor items I have. My college roommate's mom gave me the witch ghost (so me), the little plush pumpkin is from my mother in law (she gave me two others, and Ryan ate them both...), and the pink skirted witch with the crazy hair is from my dad. When I was a freshman in college, he had my grandmother go pick up a basket of Halloween snacks and chocolate covered strawberries for me. This witch was in the basket. I still remember my Nana dropping it off for me. </div>

People have been singing the praises of Everything But the Bagel seasoning for months, but I'm currently digging the Chile Lime Seasoning Blend While I am sure this stuff makes a mean taco, I use it a little more unconventionally: a dash in my snack-sized popcorn. My BFF's husband taught us to put Old Bay in our popcorn years ago, and this TJ's addition reminds me of that flavoring...but better! It has a slight kick, but it really makes you feel like you're noshing gourmet popcorn. WIN! </div>

So one of the things that I hate doing when it comes to eating healthy is giving something up. Here's the deal (in my non-expert opinion): if you give something up, it's just going to make you want it that much more OR it's not going to be a sustainable decision. Case in point: french fries. I know well and good that I'm never going to give-up fries, and I'm never going to just replace them with sweet potato fries for life. I also know I can't eat them every day, but thanks to Trader Joe's, I can feel like I am eating them every day. The butternut squash zig-zags look like crinkle cut fries, but are 100% butternut squash. I roast them in the oven until they are as crispy as they can get, top them with Trader Joe's veggie chili (yep, it's in a can...), and a little nutritional yeast, and I feel like I'm eating chili cheese fries which is a perfectly acceptable substitute until I can allow my gut to get its hands on the real stuff. </div>

Before you lose your mind, these are not pumpkin flavored. Now that that's out of the way, these little 120 calorie chocolate mouse cakes have a layer of fluffy chocolate cake, followed by a light layer of chocolate mouse, and then covered in a thin layer of orange icing. Does it help they look like tiny baby pumpkins? You bet. Is that why I bought them? You bet. However, this teeny tiny cake is exactly what I need to curb my sweet-tooth during prime Dancing with the Stars time. </div>

Since Friday, I've had fall on my mind. I spent basically all day on Monday sifting through Labor Day sales and really thinking hard about the future of my wardrobe. As I shared with a friend, I've made a few mistakes when stocking my closet over the past few years. Here's where I am (and where I'm headed!). </div>

Let's start at the beginning. I left the education field a little over two years ago. At the time, I was wearing office appropriate clothes during the week that I would rarely, if ever, bust back out at night or on the weekends. At the time, that meant I essentially had two wardrobes: one for work and one for play. That also meant that I developed this very bad habit of purchasing items for an occasion versus for a season. If I needed something for a night out with friends, I went shopping. If I needed something for a tailgate, I went shopping. I always found myself picking up an item or two of terrible quality on major sale, wearing it once (because I liked it enough) and never wearing it again. </div>

My goal for this fall is to buy some items that are casual and cute, but also functional. I think <b><a href="http://bit.ly/2x5G73z">these leggings</a></b> are a prime example of exactly that! They're leggings, but the gold zipper detail immediately punches them up to a more sophisticated level. If I wear them with a chunky sweater and some fun heels, I think I'm in business! </div>

In a perfect world, I probably wouldn't shop at any of the fast fashion companies, but let's be real: in the midst of my fashion crisis, I am also working on furnishing a house. My goal is to get back to a basic color scheme, so I can mix and match, but continue to punch up my wardrobe with a few fun items from time to time. Because the reality is, that there's always going to be a football game, there's always going to be fun dinner with friends, and there's always going to be a reason to shop. </div>

In my head, Labor Day basically means the end of summer and the start of fall. Sorry not sorry, y'all. We've had a few cooler days this week which means I've had soup for lunch, worn a pinch longer sleeve, and have been scouring the web for the best fall decor. </div>

Since we're in the "new house" this fall, I need some new fall decor. I have dreams of basically making my house a fall paradise, but realistically know that the budget won't allow for it. However, I know that if one thing is going to make me happy, it's seeing my porch doormat every time I walk in the door. I have stumbled upon some super cute mats this year, so I wanted to share them with you. You better believe that one of the Hocus Pocus ones will be making its way to our house ASAP!
